    The product

    As evidence of our attachment to our land, every year we are constantly searching for the best olive oils that Tuscany produces. An initial selection is made by tasting dozens of samples of our region's finest production. The final choice is made after the chemical analyses have been completed: the batch of product, before bottling, is examined by the Consortium which certifies its suitability to be defined “Tuscan IGP Extra Virgin Olive Oil”. Poggio de' Passeri is made with the classic varieties of Tuscan olives: Frantoiano, Moraiolo and Leccino.

    • Fruity

      It indicates the presence of the typical fragrance of healthy, fresh olives picked at the right degree of ripeness.

    • Spicy

      It indicates the concentration of polyphenols, very healthy components for the human body.

    • Bitter

      It indicates the presence of phenolic compounds, with high nutritional value and useful for the preservation of the olive oil.

    We were the first to obtain the IGP stamp as a testimony of our attachment to our land: this is why every year we are constantly searching of the best olive oils that Tuscany produces.

    We can say that, usually, an olive oil with an excellent organoleptic profile also presents excellent physical-chemical and nutritional characteristics.
