Our history

Our company was founded in Lucca in 1965 by Nivio Fabbri.

His sons Luciano and Loriano continued the business, inspired by the principles of the founder. With the arrival of Alessandro, we are now in our third generation of family ownership. In 1997, we moved our office and production to our current facility, which underwent significant expansion in 2023.

We are deeply attached to the oil and the human tradition of our land, Tuscany, one of the most famous olive-growing regions in the world.

Living here has shaped our values and those of the company, directing our professional choices towards the constant search for the highest quality products and their continuous innovation.

We are a fundamental part of many production chains; we have an intense and important collaboration with more than 150 olive growers and millers.

Together with them, we decide each year the moment of the harvest and the combination of olives to be pressed to respect the quality of our recipes: this is how our olive oil is born.

Our vision

Our work is based on choices. Above all, this means tasting, evaluating and selecting.

Three operations that involve choice. Our daily work consists precisely of choice. Exactly like our father's when he ran the farm. Olive oil is a delicate product: if one stage of its production does not go as it should, quality and taste are immediately affected.

That is why our work is not easy: it requires expertise, rigor and precision. We have to judge the work of others: the growers who produce the olives, the millers who press them, the middlemen who sell the oil. We are at the end of a long chain of relationships. This position puts us in the ideal position to do what we care about: taking care of quality.

Choosing means giving trust to a job well done and, in return, receiving trust from those who judge our work well done.

Mission

We were born in Tuscany , the most famous olive oil region in the world. Here people know oil and know how to evaluate it.

The olive trees that can be seen dotting the backgrounds of the fourteenth-century paintings of the Tuscan school are there to describe a landscape, but also a gastronomic affection.

Therefore, producing oil here means being judged by the most demanding tribune of connoisseurs there is . The work we have done to gain and maintain the trust of these consumers has designed the physiognomy of our company, imposing rigor in our choices. Our oil culture was formed in this way, and has shaped our company, and oriented our production and entrepreneurial choices.

Respecting this culture has meant, in practical terms, focusing our attention on the quality of the product . Opting for rigorous production processes, and increasingly evolved. Base the management of these processes on the quality of the people to whom they are entrusted.

The products

Our range is wide and varied, but the principle that links each product is unique: quality in selection.

In addition to the cornerstones of the offer, 100% Italian and European selected olive oils, we offer top of the line olive oils such as Toscano IGP, for which we were the first to obtain certification over 25 years ago, and monovarietals like Mare and Terra, two very different oils created to enhance specific dishes of our Italian cuisine, the best in the world.

Our range also includes organic oils, which are becoming increasingly difficult to find in a quality worthy of the Fabbri brand.
