The story

Our company was founded in Lucca in 1965 by Nivio Fabbri.

His sons Luciano and Loriano continued the business inspired by the founder's principles and now with Alessandro in the company we are in the third generation . In 1997 the management and production were transferred to the current structure which in 2023 was significantly expanded.

We are very attached to the olive oil and human tradition of our land: Tuscany , one of the most famous olive oil regions in the world.

Living here has shaped our values and those of the company, orienting our professional choices towards the constant search for the highest quality of products and their continuous innovation.

We are a fundamental part of many production chains, we have intense and important collaborations with more than 150 olive growers and millers .

Together with them, every year we decide the harvest times and choose the combination of olive varieties to be pressed together to respect the quality of our recipes , and this is how our oil is born.

Our vision

Our work is based on choices. This means, above all, tasting, evaluating and selecting .

Three operations that involve a choice. Our daily work consists precisely in choosing. Exactly like that of our father when he ran the company. Oil is a delicate product : if a single phase of its production does not go as it should, quality and taste suffer immediately.

This is why our profession is not easy: it requires skills , rigor and precision . We have to judge the work of others: the farmers who produce the olives, the millers who take care of their pressing, the mediators who sell the oil. We are at the end of a long chain of relationships. This position puts us in the ideal condition to do what we are interested in: taking care of quality .

Choosing means trusting a job well done and, in return, receiving trust from those who judge our job well done.

Mission

We were born in Tuscany , the most famous olive oil region in the world. Here people know oil and know how to evaluate it.

The olive trees that can be seen dotting the backgrounds of the fourteenth-century paintings of the Tuscan school are there to describe a landscape, but also a gastronomic affection.

Therefore, producing oil here means being judged by the most demanding tribune of connoisseurs there is . The work we have done to gain and maintain the trust of these consumers has designed the physiognomy of our company, imposing rigor in our choices. Our oil culture was formed in this way, and has shaped our company, and oriented our production and entrepreneurial choices.

Respecting this culture has meant, in practical terms, focusing our attention on the quality of the product . Opting for rigorous production processes, and
increasingly evolved. Base the management of these processes on the quality of the people to whom they are entrusted.

The products

Our range is wide and varied but the principle that links each product is unique: quality in selection .

In addition to the cornerstones of our offering, consisting of 100% Italian oil and selected EU oil , we are characterised by excellent products such as the Toscano PGI , for which we were the first to obtain certification more than 25 years ago, or single-variety products such as Mare and Terra , two very different oils created to enhance specific typical dishes of our Italian cuisine , the best in the world.
